Sun-Dried Tomato & Rosemary Meat Sauce

 

Rosemary & sun-dried tomatoes play up an otherwise simple tomato meat sauce. Add any shredded veggies to give this a nutrient boost as well- do not hesitate to shred and toss in.

Ingredients

  • 1 teaspoon olive oil
  • ½ cup onion, minced
  • 1 cup mushroom, minced
  • 8 ounces ground beef, or bison/turkey
  • 2 cloves garlic, finely minced
  • 1 tablespoon rosemary, fresh, more to taste and garnish
  • ¼ cup sun-dried tomatoes, rehydrated or packed in oil & minced
  • 14 ounces roasted crushed tomatoes, can
  • ½ cup red wine, or broth, more if needed

Serving Size: 2 People



 

Preparation Instructions

Warm the olive oil in a saucepan over medium heat and toss in the minced onions & mushrooms. Saute, tossing lightly until the onions are wilted. Push to the side of the pan, or set aside on a plate. Sear the ground beef/bison/turkey breaking apart until it is cooked through.

Toss in the garlic, onions & mushrooms, rosemary, sun-dried & canned tomatoes and the red wine or broth.

Bring up to a simmer for at least five minutes, add a splash more of the red wine or broth for a runnier sauce.
