Tomato White Beans

 

This simple toss of tomatoes, veggies and white beans can top pasta, rice or even to fill a crusty loaf of French bread with cheese melted on top. Use whatever medley of fresh herbs that are available to you. If you only have access to dry herbs, use half of the amount.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely minced
  • 1 sweet potato
  • 1 carrot
  • 3 radishes, or more if small
  • cup white beans, cooked
  • 2 tablespoons fresh oregano, finely minced
  • 1 clove garlic
  • 15 ounces tomato sauce, can or jar
  • 15 ounces diced tomatoes, or crushed, from can or jar
  • ¼ cup fresh herbs, finely minced, such as parsley, oregano, basil, etc.

Serving Size: 4 People



 

Preparation Instructions

Heat the olive oil over medium heat. Toss in the diced onions, sweet potatoes, carrots and radishes. Saute just until tender.

Add the white beans, garlic, tomato sauce, diced tomatoes and fresh herbs. Simmer for about 10-15 more minutes until the flavors start to meld.

This makes beautiful leftovers too.
