Winter

White Bean Tuna Salad

 

White beans and tuna make great friends in this simple lunch. Add any veggies: carrots, celery, onions, spinach or cabbage that you may have on hand. Carrots & cabbage work especially well in the winter. Currently the Seafood Watch lists Albacore Tuna troll or pole caught from the US or British Columbia as a top choice for sustainable seafood. Wild Planet Low-Mercury Albacore is a brand worth seeking out for its quality and sustainable seafood.

Ingredients

  • 1 can white beans, drained and rinsed
  • 1 can tuna, wild albacore
  • 1 carrot, peeled
  • ½ cup cabbage, shredded or chopped celery
  • 2 tablespoons mayonnaise, or plain yogurt
  • 1 pinch black pepper, to taste

Serving Size: 3 People



 

Preparation Instructions

Drain the white beans and rinse well.

Do not drain the tuna, especially if you have a happy sustainable variety. Many of the Omega 3 oils and flavor reside in this liquid. If you do drain the oil, add a bit more mayonnaise. Tear the tuna into pieces.

Shred the carrot and cabbage, or finely mince.

Toss together the white beans, tuna, carrot, cabbage or other veggies, mayonnaise and black pepper. Taste.

Add a pinch more black pepper and a touch of salt if needed- we don’t recommend any since the tuna & beans may contain a lot, but taste & adjust accordingly.
