Beet + Avocado Sandwiches

Roasted beets can be done in advanced and kept on hand for an easy sandwich packed with nourishing flavor. The bacon makes it more like a BLT, but is an entirely optional in our home. Make this gluten-free with your favorite GF bread.

Beet Beef Bolognese

Great way to sneak beats into a classic Italian standard as well as reduce the traditional amount of beef. This can all be tossed in a crockpot or sped up in a pressure cooker. The more time you have to let it cook the better as it all melts together. Serve on top of pasta.

Beet Brown Rice

The deep color and flavor of beets enhance brown rice into a crimson & vitamin rich side. Use short brown rice and the risotto style of slowly adding the red wine and broth to give it a slightly creamier essence. If you are feeling less desire to be strapped to the kitchen, toss it in the pot and give it a stir more occasionally. Reserve any greens from the beets to saute lightly and serve alongside.

Beet Crisps

At the start of spring or fall, baby beets arrive and if you are lucky they will still have their greens attached looking oh so charming. With a rough scrub and a sharp knife these thin beet slices sear up to quickly become salty-olive oil-chip-like. If you enjoy Kale Chips- these are rather reminiscent.

Beet Fried Rice

Red stained, flavorful brown rice is a perfect side to any Chinese-style dish. A critical part of fried rice, is using day old, slightly dried out rice. If you didn’t make it the day before, cook it an hour or two ahead, spread it out on a baking sheet to dry out in the fridge. Use the beet greens for the greens or substitute chard or kale if your greens were purchased topless. The fish sauce is optional, but certainly adds the authentic flare to the dish. Simply adjust not using the fish sauce with a bit more salt to taste. Skip the egg to make it vegan, a sauté of tofu or crumble of cashews are a nice substitute.
