Mustard Seed Marinated Cauliflower

Cauliflower is made vibrant and almost floral with tangy mustard and coriander seeds. The longer it rests the more intense and delightful the flavors become. You can even mix in a few other favorite sliced vegetables such as carrots or radishes. If you do not have a mortar and pestle or whole mustard and coriander seeds available, simply use the ground version. It takes only a few minutes to put together, but requires a few hours at room temperature before it is ready to eat, which makes it especially nice for lunches on the go.

Nectarine Kale Salad

This massaged kale salad is beautified with the simple addition of paper thin sliced nectarines. Of course, any stone fruit will slide into the nectarine’s place such as peaches, apricots, plums or even cherries. Add cheese, nuts or cooked grains to make this salad a bit heartier for a main dish.

Nopales & Summer Squash Tacos

In the southwest, the Prickly Pear Cactus is prevalent in many yards providing a tasty vegetable in the early summer as fresh paddles emerge. Well stocked Mexican markets will sell the fresh nopales. Occasionally, I see them available in jars in the Mexican section of my grocery store, too. My favorite way to prepare them, after carefully removing the spines is on the grill. Summer squash, onions or any other grill loving vegetable can accompany the nopales. Your favorite salsa, sauces or our favorite, Apricot Chili Cream, are delightful dolloped on as well.

Nut 'Graham' Crackers

My goal for these graham crackers was to create a partner for my homemade marshmallows that would balance the glycemic levels. The special treat was that these are naturally gluten-free as just a bit of gluten-free flour is needed and regular glutinous flour it is not required to make them stick together beautifully. The dough is a sticky affair, but rolling it into between two sheets of parchment or wax paper and a silpat makes these crackers come together easily. If you start with pecan and/or almond meal a food processor is not required. If you want more than one batch of these, make the recipes individually as it doesn’t double easily especially if you are using a food processor.
