Crockpot Chicken

A chicken in every pot and a car in every garage. President Hoover and I would like to see more simmering chickens! ;-) This dish is easy enough that you will start to add it to your regular routine. Once the chicken is cooked through the bones can be returned to crockpot with plenty of water and you will have easy broth in no time, too.

When you are craving fish & chips, crunchy fish tacos or just a bit of grease around your omega rich protein, this recipe gives you the deep-fried taste without the deep-fryer.To make them gluten-free, simply replace the panko crumbs with gluten-free breadcrumbs or increase the amount of potato chips. Be sure to use low-sodium potato chips otherwise it will be too salty after you blend the chips.

Summer sweet melons and crispy cucumbers are tossed with a Lemon-Lime Yogurt Dressing. Goat cheese and pistachios add another element, but are each optional. The citrus zest makes the dressing delightful, but if you are without a microplane or fine grater, no worries, the juice is more important.

Thinly sliced cucumbers and melon, especially watermelon with a an acidic splash of lime or rice wine vinegar makes a bright delight to have on the side. Cut the melon into a similar size to the cucumbers.
