Fire & Ice Cherry Tomatoes

These cherry tomatoes first hit your tongue with a bright, vinegary spiciness and as you bite down these flavors meld with the candy sweetness of the tomatoes. Adjust the red pepper flakes as you like to avoid too much spice or more for extra heat. The red onions become one with the sauce, making them taste less like their astringent selves and more marinated & spicy. This salad does well marinating in the fridge until you are ready to enjoy it.

Fish Tacos

A thick slice of sustainable white fish such tilapia fillets, Pacific Cod or Halibut work well seared on a grill or in a cast-iron pan. The seasonings are simple and the tacos are tucked in with a generous pile of cilantro-lime slaw.

Herbs & edible flowers are minced up and whipped into creamy mascarpone to create a little dip or spread that is more magical than a regular old cheesy herb item. The minced nuts add a hint of flavor and texture, but if you prefer this nut-free they are easy to eliminate.

Fondue

Fondue literally means to melt and this creamy, white wine enhanced sauce of cheese is exactly that and it is perfect for dipping chunks of bread or veggies. If serving with vegetables, they can be raw or quickly blanched. Also, all you need is a pot and stove— special fondue pots are fun, but hardly required. The kirsch is very much optional too.

French Lentils

The lightly dressed French lentils are inspired by Julia Child, as they use shallots, dijon and fresh herbs to enhance their flavor. French lentils have a slightly better integrity than the red or even brown lentils which become soft quickly. Regardless, avoid overcooking your lentils to avoid mush.
