Blueberry Pecan Chicken Salad

A light lemon herb dressing replaces the creamier sauces that normally accompany chunky chicken salads, while blueberries and pecans give this dish something exciting to talk about. Earthy and sweet, tuck this in a hearty whole grain bread or dolloped on top of a your favorite greens. Start with leftover cooked chicken, torn or cut into pieces.

Breaded Roasted Cauliflower

I have a weakness for Roasted Cauliflower. In an attempt to take the flavors and textures even higher I dipped, breaded and roasted them into crispiness. Fresh out of the oven the center oozes in delight. Any combination of the breading will do. We use a third each of crispy pankos, hearty almond meal and grated parmesan. You could skip one of these as needed and replace it with more of another. For example, replace the breadcrumbs with more almond meal to make it gluten-free. Ideally, use at least two out of the three crumb mixtures for a more interesting texture and flavor.

Broccoli, Brie & Apricot Jam Scramble

This playful combination is a fun twist on an easy egg scramble. A saute of onions & broccoli are scrambled in with eggs and finished with chunks of brie, toasted almonds and a dollop of apricot jam. Substitute another type of jam, such as a peach or marmalade if you cannot find apricot.

Brussels Sprouts & Bacon Saute

Shredded Brussels sprouts are sauted in just a bit of bacon and finished with sliced almonds or your favorite nuts. Hazelnuts are a lovely substitute. Fresh pomegranate seeds or dried cranberries are a lovely, but optional finish to this dish as well.

Butternut Quinoa Patties

Just a bit crisp, with hints of squash, cheddar and sage, these quinoa patties look more complicated than their simple construction. Butternut squash is shredded instead of mashed which makes these patties more like a fritter, but with protein from the cheese, almond meal and quinoa. If you want to skip the nuts, substitute bread crumbs. If you want to skip the dairy, there is no need to add anything else- we tried them with and without it, both are delicious. Cheddar just makes them a bit more kid-lovable. Be sure to cook the quinoa ahead. These freeze well, but also the mixture can be made ahead and just balled up and seared/baked to order.
