Eggs moisten and fluff up day old bread in this easy casserole that is packed with broccoli. Make this in advance, even the night before, and enjoy an easy, pop it in the oven meal for dinner or brunch.

For dairy free, simply substitute water for the milk. However, if you are a dairy-queen, do not hesitate to sprinkle on cheese as it will be tastiness. This could potentially be gluten-free by using your favorite g-free bread.

Broccoli, Brie & Apricot Jam Scramble

This playful combination is a fun twist on an easy egg scramble. A saute of onions & broccoli are scrambled in with eggs and finished with chunks of brie, toasted almonds and a dollop of apricot jam. Substitute another type of jam, such as a peach or marmalade if you cannot find apricot.

Ricotta & broccoli come together to sauce up pasta in this quick week-day dish. Use brown-rice pasta to make this gluten-free. The stem is great to use here, but peel off the tough outer skin before chopping it up. For a bit more protein, sprinkle on pine-nuts or walnuts.
