Looking out on a blustery, snowy day, spring may be coming up on the calendar, but the weather does not allows comply. This pasta salad tosses together vegetables that can stand the chilly weather, but remind us that spring is in fact coming soon. Substitute and roast the vegetables you are able to find when it is cold. The meyer lemon adds another layer of flavor, too, but a regular lemon will work instead.

We like a runny egg yolk in my home, but sometimes flipping an egg over easy will increase the risk of the yolk breaking and inevitably cooking the whole darn thing. This method makes a simple fried egg a bit easier to master without the flipping.

The strands of eggs are reminiscent of paper like noodles. Just a few ingredients come together for this soul satisfying soup. You are welcome to shred in a few other vegetables, but green onions or scallions are all that is needed for this bowl of comfort. The cornstarch or mochiko will give it a thicker texture that is similar to what you might experience at a restaurant.
