As this month of healthy resolutions and cooler weather continues, it is hard not to want dishes that are healthy, but also comforting and warm.

We have a few dishes that come together quickly this week including the Salmon in Paper with Glazed Beet & Arugula. The salmon maintains moisture and flavor when it is bundled in parchment and the clean up is simple as you just toss out the paper.

For kids this week, try the Avocado Enchiladas with Beet-Apple Saute. The enchiladas are stuffed with peas, cheese & avocados, while the beets are sweetened up a bit with apple & cinnamon.

The Jamaican Burgers and Sweet Potato Salad are the featured vegan dish this week and they are loaded with flavor. The vegan Ginger, Fruit & Nut Salad is spinning with zesty ginger and can be paired with a side of quinoa or if you are a meat eater try Roasted Chicken.

The French Onion Soup takes its time, but is worth every slurp. Pair it with a salad to complete the dish.

For breakfast, try a quick egg sandwich with a bit of cheese & spinach that can be packed up to take on the go.

For lunch, the Salmon Salad Sandwiches are packed with extra veggies.

As a special treat, we included a snack recipe of stove-top style popcorn and a healthy vegan seasoning spice.
