The Food
As January resolutions and health-minded eating continues we feature dishes with a healthy, Winter twist, such as the Sun-Dried Tomato Cobb Salad for lunch with Homemade Polenta Croutons and Seared Chicken for a bit more protein.
Simple dishes such as the White Bean Saute with Kale, Polenta & Cauliflower and the Stroganoff also ode to the colder months with comforting textures and flavors, but are still packed with healthy veggies.
Apple Pecan Salad with Jewel Quinoa is another vegan option, which is both simple and flavor packed.
Tortilla Soup is an easy dinner that could extend into a party as each guest makes up their own. The Asian Cabbage Wraps are also fun for everyone to assemble separately- and remember napkins as the flavorful juices sometimes run away from you.
A classic, crispy fish dish gets a make over as well as a Homemade Tartar Sauce.
Any leftover Polenta can be used for creamy Polenta Breakfast- substitute apples for the pears if necessary. The polenta can also be chilled and made into croutons for the Cobb Salad.
