The Food
With the end of the Holidays you may be feeling ready to simplify and ‘veggify’ your diet. As 2011 starts, enjoy produce that stores well such as squash, onions, and frozen greens. For fresh fruit, citrus is abundant this time of year in the U.S.
A unique Winter Squash, Delicata is related to the Summer squash family such as zucchini, partially meaning its skin is edible and tasty. Try it roasted and tossed in Chipotle alongside the Orange Roasted Chicken or the Seafood Enchiladas.
Orange Beef and Broccoli Beef are combined to create a delicious nutrient packed Chinese stir-fry.
Comforting Split Pea Soup is paired with a simple spinach side salad and French bread, if desired. This can be Vegan or toss in some ham for extra flavor.
The main Spinach salad is packed with goodness including avocados, bits of cauliflower, toasted almonds and a garlic-lemon dressing. Serve with quinoa on the side or sprinkled in.
For breakfast, the Kiwi Smoothie is easy to toss together and pair with eggs, toast and wilted greens for a nutrient and protein packed start.
For lunch, the Curried Chickpea Salad cooks up on the stove top but is tasty at room temperature as a salad.
