Week of March 27, 2011

In this between time- almost fully Spring, not really Winter- we embrace each season. Starting with a delightful Creamy Arugula Fish with a Glazed Beet & Arugula Salad. The leftover herb butter from the fish, works well scrambled up with eggs or tofu for breakfast or slathered onto a grilled cheese with sun-dried tomatoes.

Those sun-dried tomatoes remind us summer is not far by adding powerful flavor to a quick meat sauce with fresh rosemary. Serve this with broccoli over polenta. Broccoli makes it sequel Italian appearance in a quick Broccoli Ricotta Pasta. Serve it as a one-pot dish or add a simple, lemon & spinach salad.

To satisfy a craving for summer as the season starts to warm up, we are featuring one of our favorite short-cuts: White Girl Salsa. Every ingredient is completely recognizable without any funky preservatives, chemicals, colorings or additives. To buy White Girl Salsa, check their website for local retail locations or buy online.

We are offering several quick dishes using salsa including Black Bean Tostadas or Sweet Potato & Black Bean Quesadillas. We also created a Brilliant Green Enchilada Sauce of pureed spinach & the Whit Girl Salsa to cover Seafood Enchiladas, fold into Chilaquilles or bake up with eggs for a simple breakfast. Make a triple batch and enjoy all three dishes throughout the week.
