Next weekend it will be my first Mother’s Day as an actual Mom. I waited a whole year for this. My daughter was born the day after Mom’s Day last year ensuring we would know each other quite well before I could have my day to celebrate.
As a new Mom I feel we deserve something a bit girlie, not too mention breakfast in bed (hint, hint!). Try out the Strawberry Granola with Fresh Strawberries & Lavender Yogurt and the savory choice of Dijon Roasted Asparagus with Runny Eggs.
For an elegant dinner, make the Mom in your life this honey glazed Lavender Lemon Chicken. It is wonderful on the barbeque and then given a more gentle floral touch. The infused honey is used in all of the lavender dishes this week, so make a double batch and spread the love. Pair the chicken with this Lavender Spring Salad and a quick saute of Purple Potato Toothpicks. Very oh-la-la French. For a vegetarian choice, try the Pink & Green medley of salads, including the Snap Peas & Mozzarella and Strawberry-Radish Greens served alongside a Lemon Pilaf.
For lunch, pack a picnic with Lentil Pate & Almond Crackers.
If your Mom is far away, why not whip up a batch of the Strawberry Granola, toss it in the mail and then send her a gift certificate to enjoy meal planning too.
I love the fact that even though Cinco de Mayo is not exactly celebrated throughout Mexico, it is an opportunity for those of us just north to enjoy a fabulous culture through our stomachs. Shake up a margarita, splash some on the Tequila Lime Shrimp. Then toss together any of this week’s Mexican dishes such as the Spring Fiesta Salad, Creamy Chicken Enchiladas, Feta-Guacamole, and Black Bean Dip. Toast up some Homemade Tortilla Chips to make the celebration even healthier. The next morning try these Eggs in Tortilla Cups.
Happy Mother’s Day to all of the Mom’s out there! Especially for those blessed to be experiencing your first. I am learning it is quite a job to be a good mama, but the rewards certainly make life a bit more delicious.
