Week of September 11, 2011

We each have our own story, our own memories of ten years ago today. For me, in between watching the world seemingly fall apart, staring at the TV and hoping it was all a terrible movie: I was cooking. Through teary eyes, I stared at my sister’s CSA and the almost endless supply of tomatoes. My solution to the day’s sadness was Panzanella.

Remembering what you made or ate on September 11th is not necessarily normal. Maybe instead you remember how the weeks that followed included comfort foods, being with family and close to home. During this week of reflection, I am featuring a few of my own family’s comfort foods. One of my favorite meals as a child was Lemon Salmon with Cucumber Sauce. Mashed Potatoes & Green Bean Almandine also made regular appearances in my youth, sometimes with the salmon, but not always.

This week seems an appropriate time to introduce my favorite childhood meal. Zucchini Soup & baked Bean Burritos are simple and a classic favorite of my parents & siblings. I added my own variation with an oven Roasted Salsa easy to make with an abundance of tomatoes as the summer ends.

Comfort foods are perfect when they take minimal preparation even if they spend a while slowly cooking. Happy, pasture raised chickens do well slowly roasting until tender. Just toss it in the oven along with a few elements for the Chipotle Squash Polenta and the Roasted Tomato & Kale Salad. Roast Beef is perfect for a Sunday supper with a Creamy Blue Pear Salad and a simple Lemon Pilaf. The bonus are leftovers, Roast Beef & Apple Sandwiches for lunches with a Blue Cheese Spread and Veggie Sticks.

Tortilla Soup is also excellent on the go, along with Grilled Quesadillas with Zucchini & Corn which can be made ahead and warmed briefly just before eating.

With the extra tortillas and Roasted Salsa, try these Tortilla Egg Cups for breakfast.

Chocolate may be the ultimate comforting treat. When you add antioxidant rich cacao nibs & powder to dates & almonds they transform into something magical. The raw, vegan Cacao Almond Truffles are healthier than they seem but can be enjoy as a dessert, mid-morning snack or post-workout treat.

Last but not least enjoy a happy, pick me up creamy Peach Smoothie- for breakfast or a snack.

Whether you are surrounded by family or dining alone this week, enjoy these comfort foods that indulge in the season’s finest.
