The Food

Week of October 30, 2011

Happy Halloween!

Growing up I have this vague memory of a pizza guy arriving in between trick or treaters. It probably only happened a handful of times, but let’s face it Halloween is a holiday with few culinary traditions and so treat yourself to a pizza pie this week. Try this seasonal twist with pears and dollops of ricotta cheese. And don’t forget to start with a generous spread of garlic oil to ward off any vampires who may stop by.

While living in San Luis Obispo, my nieces, nephews and I focused more on pumpkins to get everyone ready for trick-or-treating and this Curried Pumpkin Soup started making annual appearances. Make the soup for lunch paired with Apple Quesadillas.

If you want a savory twist on chocolate for this candy rich day, try the Chocolate Stout Stew packed with chunks of pumpkin and hearty grass-fed beef. Serve it with a Ginger Vinaigrette Spinach Salad.

After all of the jack-o-lanterns are carved, wash and dry the seeds for Roasted Pumpkin Seeds. Then roast up chunks of sugar pie pumpkin for this elaborate main dish Roasted Pumpkin Salad.

For Halloween morning or as a treat this week whip up these Pumpkin Muffins with a simple not too sweet Maple Cream Cheese Spread.

For breakfast at home or on the go, try the Egg Sandwich with Spinach. Serve it alongside gorgeous Autumn Fruit with a Yogurt Sauce.

As you recover from the sugary sweet holiday, join the challenge to eat in a more wholesome, planet friendly way. Sign up for free and every few days you will receive an email supporting you over 30-days of eating in a way that is healthy for the earth and great for your body.

This week we have a few dishes perfect for the challenge including the vegan stir-fry of Garlic Bok Choy and Thai Almond Broccoli. For a more protein rich dish, wrap Wild Salmon in parchment with a couple sides of Roasted Butternut Squash & Greens and Roasted Cauliflower.

May your Halloween be a seasonal, vegetable packed shout out to the sugar ghosts! After the goulish day come join us in the Healthy Earth, Healthy Body challenge.

Cook seasonally. Eat consciously. Live well,

Chef Lilly
