Black Bean & Sweet Potato Enchiladas with Kale Chips

1. Roast up the sweet potatoes and cook the black beans if making them from scratch.
2. Whip up the enchilada sauce while those both cook.
3. Tear the kale and rub the olive oil on each leaf. 4. Assemble the enchiladas and bake.
5. Roast the kale on a separate shelf in the oven.

These savory, yet sweet enchiladas have an easy yogurt sauce on top making these simple to put together with not a lot of complicated ingredients. Save time by preparing the sweet potatoes ahead or using leftover mashed ones.

Kale chips are probably our favorite way to make kale. Roasted with a light drizzle of olive oil, salt and black pepper, if you so choose. They are simple to make and addictive to boot.
