Creamy Arugula Tilapia with Glazed Beet & Arugula Salad

Cook and glaze up the beets. Blend the Arugula Butter. Prepare & flour the tilapia. While it bakes toss together the salad. Serve over brown rice or french bread if you need a few extra carbohydrates.

Glazed Beets & Wilted Arugula

Pan braise the beets, toss with baby arugula and a crumble of goat cheese. A sprinkle of your favorite nuts instead of the goat cheese will give you a nice vegan and dairy free alternative.

A creamy arugula & garlic butter becomes a simple sauce for an almond crusted fish. Most likely there will be leftover pesto butter- which is lovely spread on French bread or tossed with pasta.
