Creamy Arugula Tilapia

A creamy arugula & garlic butter becomes a simple sauce for an almond crusted fish. Most likely there will be leftover pesto butter- which is lovely spread on French bread or tossed with pasta.

Ingredients

  • 2 cups arugula, washed, divided
  • 1 clove garlic
  • 4 ounces cream cheese, softened
  • 4 tablespoons butter, unsalted
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 1 pinch black pepper
  • 2 tilapia fillets, or other simple sustainable white fish
  • 3 tablespoons almond flour, or cornmeal

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 425.

Toss half of the arugula, garlic, cream cheese, butter and a splash of the olive oil into a food processor. Blend until smooth. Season with a pinch of salt and pepper.

Season the tilapia with salt and pepper. Sprinkle on the almond flour or cornmeal, pressing & flipping over to coat both sides evenly.

Spread the olive oil in the spots where the fish will bake in the pan. Flip over coating the fish on both sides.

Bake for 5 minutes. Flip over and dollop on a tablespoon of pesto butter all over each fish.

Bake for another 4-6 minutes until the pesto butter is melted and the fish easily flakes with a fork.
