Ginger Vinaigrette Spinach Salad

This simple ginger vinaigrette is the star of this salad as it coats baby spinach. A handful of nuts and dried fruit complete this salad, feel free to substitute your favorites.

Ingredients

  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 2 teaspoons ginger, fresh, peeled & finely minced
  • 1 pinch salt
  • 1 pinch black pepper
  • 4 cups baby spinach, washed and dried
  • 1 carrot, peel and shred
  • cup dried cranberries, or other dried fruit, chopped
  • ¼ cup sliced almonds

Serving Size: 2 People



 

Preparation Instructions

In a small jam jar, shake together the olive oil, vinegar, honey, ginger, salt & pepper, to taste. Alternatively, whisk it in a large bowl, if that is easier.

Add the spinach, shredded carrots, dried cranberries and almonds into the bowl. Toss with the dressing and serve immediately.
