Make the chips. While they bake, simmer and puree the black bean dip. While they simmer, chop up the Sunchoke Salsa and Feta-Guacamole.

Making chips from scratch may sound tedious, but the health & flavor benefits are great. This is a simple recipe, but do them up a bit further with various seasonings of your choice: cumin, smoky paprika, even a pinch of sugar or cinnamon.

Whip up this dip and serve hot or cold as an easy lunch or tasty snack. A Hatch Chili is an anaheim chili that has been roasted. If you cannot find them fresh or frozen, canned green chilies work as well.

Sunchoke Salsa

The mysterious sunchoke aka Jerusalem artichokes tastes a bit like jicama and is perfect for a crispy salsa. Ginger & lemon replace the more traditional jalapeno & lime, but feel free to substitute those instead.

Did you know that Guacamole could actually get better? The sharp, salty flavor of feta takes this dip to a new level. Queso fresco also works perfectly well instead.
