Shredded Pork Tacos with Sunchoke Salsa & Feta Guacamole

Prepare the pork. While it cooks whip up the Sunchoke Salsa. It does best when it has time to savor. Prepare the ingredients for Feta-Guacamole next, but wait to cut the avocados until the very last minute just before whipping it up to serve alongside.

Shredded Pork Tacos

Simmered until the pork falls apart, this works well on stovetop, in a pressure cooker or crock pot. The poaching liquid is reduced down afterwards for extra flavor. The most involved part is shredding the pork, find a buddy to get the job done faster.

Sunchoke Salsa

The mysterious sunchoke aka Jerusalem artichokes tastes a bit like jicama and is perfect for a crispy salsa. Ginger & lemon replace the more traditional jalapeno & lime, but feel free to substitute those instead.
