Roasted Cauliflower

from Winter Wedge Salad with Roasted Cauliflower, the Week of February 26, 2012.
View the previous recipe for this meal.

This simple white vegetable is easily tossed in the oven and roasted until slightly golden. The parts touching the pan tend to take on color faster, so toss periodically until they are tender and golden.

Ingredients

  • 2 cloves garlic, minced fine
  • 2 tablespoons olive oil
  • 1 lb cauliflower, florets
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People

Preparation Instructions

Preheat the oven to 400.

Toss the garlic, olive oil and cauliflower together in a baking pan until well coated. Place in the oven for 20-30 minutes until the cauliflower is tender and lightly golden.

If desired, sprinkle on a bit of grated parmesan cheese.
