Winter Wedge Salad with Roasted Cauliflower

Chop up the cauliflower and start roasting. Sear the bacon. Prepare the other ingredients for the salad. Cool the bacon just until you are able to crumble it. Sear the cranberries and nuts, if you dare. Assemble the Wedge Salad.

Roasted Cauliflower

This simple white vegetable is easily tossed in the oven and roasted until slightly golden. The parts touching the pan tend to take on color faster, so toss periodically until they are tender and golden.

Winter Wedge Salad

Wedge salad hardly deserves the reputation most salads have of being healthy & light. This supposed salad is best with a knife & fork and possibly another side of vegetables to balance the scrumptious dense toppings. We winterized it by eliminating the out of season tomatoes and topping it with dried cranberries & pecans. Get extra naughty and use the extra bacon grease too.
