Roasted Cauliflower Soup with Caramelized Onion, Apple & Hazelnut Salad

Roast the cauliflower. Prepare the salad ingredients. Saute & caramelize the onions. Puree the soup. Place in a pot to simmer. If you want to make this a bit more extravagant, add these Cheese Toasts to dinner.

By slow roasting the cauliflower the natural sweetness comes out. Since there are only a few ingredients in this soup, use a high-quality flavorful broth, homemade if possible.
