Roasted Cauliflower Soup

By slow roasting the cauliflower the natural sweetness comes out. Since there are only a few ingredients in this soup, use a high-quality flavorful broth, homemade if possible.

Ingredients

  • 1 head cauliflower
  • 1 onion, cut in chunks
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon salt
  • 3 cups broth, chicken or no-chicken vegan

Serving Size: 4 People



 

Preparation Instructions

Preheat the oven to 425.

Toss the chunks of cauliflower and onions on a baking sheet with the olive oil and salt. Roast for 20-30 minutes, tossing periodically until they are tender to the bite.

Place the vegetables in a blender. Pour in at least half of the broth. Blend until smooth, adding more broth to make it as thin or thick as you like. Taste. Add more salt and pepper to taste, if desired.
