Olive & Pine Nut Topping

Toasty pine nuts, balance out briny olives with just a sprinkle of fresh herbs. We choose parsley, but basil or oregano would work as well.

Ingredients

  • cup pine nuts
  • 1 pinch salt
  • 1 pinch black pepper
  • 4 green olives
  • ¼ cup kalamata olives
  • 2 tablespoons fresh herbs, finely minced
  • 1 tablespoon extra-virgin olive oil

Serving Size: 4 People



 

Preparation Instructions

Place the pine nuts in a skillet over medium heat. Rest for about 30 seconds and then toss, repeating until a bit of brown color starts to appear on the edges of the nuts. Once they are gaining color, sprinkle on the salt and pepper and remove from the heat.

Chop up the olives and toss with the nuts, fresh herbs and extra-virgin olive oil.
