Almond Pancakes with Pecan Butter & Spiced Grapefruit

Start with the pecan butter and set aside. Whip up the pancake batter. Slowly start searing the pancakes. As they cook, prepare the grapefruit. Broil briefly if desired. Then turn the oven down and use the oven to keep the pancakes warm.

Almond Pancakes

Fluffy, gluten-free, low-glycemic pancakes are attained through beating the egg whites and adding almond flour. A splash of almond extract will add to the flavor, but it is an optional addition. There are lots of options to make these pancakes your own including the milk & flour you prefer to use at home.

Cardamom Ginger Grapefruit

Grapefruit halves are fairly common at breakfast buffets and brunches, but a light sprinkle of the sugar-spice mixture makes grapefruit pleasantly extraordinary. Next, they are lovely broiled until lightly caramelized or just room temperature. Serve any extra spiced sugar at the table or triple the mixture to have it on hand throughout the week.
