Tempeh Taco Salad with Feta-Guac & Pineapple Salsa

Start making the taco seasoned tempeh first. Prepare the Taco Salad ingredients and chop the Pineapple for the salsa, too. Once everything is mostly put together, whip up the Feta Guacamole just prior to serving. Skip the cheese to make this easily vegan.

Tempeh gets browned and spiced into a divine dish with lime and veggies. It’s perfect for stuffing into tortillas or as on topping for rice or grain bowls. Anytime, taco meat is called for this is a delicious vegan option to use.

Set your Taco Salad up like a salad bar. Each diner will be able to assemble their own to create their favorite combinations, which is especially great for kids. Add any other seasonal ingredients your family loves such as peppers, more greens or shredded roots.

Pineapple Salsa

This tropical salsa truly works with any variation. Pineapple is easy to come by, but a small dice of mangoes, kiwis, papayas, or other tropical fruit. I prefer to use fresh, but a nice quality of canned or frozen pineapple can work too.
