Taco Salad

Set your Taco Salad up like a salad bar. Each diner will be able to assemble their own to create their favorite combinations, which is especially great for kids. Add any other seasonal ingredients your family loves such as peppers, more greens or shredded roots.

Ingredients

  • 2 ounces tortilla chips , about 2 large handfuls
  • 1 can black beans
  • 1 head lettuce, washed, dried and torn into pieces
  • 1 carrot, shredded or sliced
  • 1 cup corn
  • ½ cup salsa
  • ½ cup sour cream, or greek yogurt, optional
  • 4 green onions, sliced thin
  • 3 tablespoons vinaigrette, or other cilantro dressing as may be listed in a meal

Serving Size: 2 People



 

Preparation Instructions

This salad is simply the sum of its parts. Line up each item with serving spoons and have each person layer to their hearts content. There is no right or wrong way and feel free to add other items that might sound tasty.

Also serve with Cilantro Dressing, Spicy-Coconut Cilantro Dressing and/or Taco Beef, using ground beef, bison, or turkey.
