View the next recipe for this meal.

The flavors, spices and essence of carrot cake are smoothed out into creamy deliciousness. Add flakes of coconut for an almost crumbly texture. If you like nuts in your carrot cakes, add a small handful of your favorite. If you want it a bit creamier, add yogurt.

Ingredients

  • 1 cup carrot juice
  • 1 banana, cut in cubes, frozen
  • ½ cup pineapple, chunks, frozen (or more banana)
  • ½ teaspoon ginger
  • ½ teaspoon cinnamon
  • 1 pinch nutmeg

Serving Size: 2 People

Preparation Instructions

Start with about half of the carrot juice and the remaining ingredients.

Add more carrot juice slowly to help the fruit blend up until it is as smooth as you like.
