Prosciutto Snap Peas

Crunchy prosciutto adds a salty balance to garden sweet snap peas.

Ingredients

  • 2 tablespoons olive oil
  • 2 slices prosciutto
  • 1 lb snap peas, trimmed
  • ½ lemon
  • ¼ teaspoon salt

Serving Size: 2 People



 

Preparation Instructions

Heat the olive oil in a skillet over medium heat. Add the slices of prosciutto. Flip over when the first side is golden.

Meanwhile, trim the snap peas and cut in halves or thirds.

Once the prosciutto is crisp, set aside. Toss in the snap pea bites. Sear and saute lightly until they are golden on each side. Break the prosciutto into pieces. Toss in with the snap peas.

Finish with a squeeze of lemon juice and a sprinkle of salt.
