Lavender Chicken with Roasted Strawberry Salad with Prosciutto Snap Peas

Roast the strawberries first and simmer the lavender syrup. Marinate the chicken briefly. Allow the strawberries to cool slightly (even in the fridge) and then blend them into a dressing. Cook the chicken. As it cooks, saute the Proscuitto & Snap Peas. Toss the cool strawberry dressing with the greens and serve with the chicken.

Roasted Strawberry Salad

Strawberries are roasted until their sweetness intensifies. Blended up with a bit of olive oil and balsamic they become a heavenly dressing to toss on greens. This is simply greens and dressing, but feel free to add your favorite spring vegetables such as snap peas, asparagus or green peas. Even a crumble of cheese or dusting of nuts would compliment this simple salad well.

Lavender Lemon Chicken

Grilled chicken is given a feminine sweet touch with this lavender infused honey. Skin coated bone-in chicken will help the chicken stay moist and flavorful. English lavender is better for eating than the French lavender, which is best in the powder room.
