Snap Pea Saute

from White Bean, Artichoke & Snap Pea Saute over Garlic Seared Polenta, the Week of May 13, 2012.

A quick saute will keep snap peas bright and crisp. Use butter, olive oil or a combination of both as we do.

Ingredients

  • 1 lb snap peas
  • 1 teaspoon olive oil
  • 1 teaspoon butter, unsalted
  • ¼ teaspoon salt, more or less

Serving Size: 2 People



 

Preparation Instructions

Wash and pat the snap peas dry. Trim the ends and cut in half or thirds.

Melt the olive oil and/or butter in a skillet over medium heat. As soon as it is hot, toss in the snap peas. Shake and saute until hot and heated through.

Sprinkle with the salt & pepper to taste.
