Black Bean Tacos

These vegetarian tacos are a great base and excellent option when serving all different types of food preferences. Take away the cheese for vegan or add a little grilled meat for those who want it.

Ingredients

  • 1 can black beans, drained
  • 1 teaspoon cumin, ground
  • ¾ cup salsa, tomato or fruit based
  • 6 corn tortillas
  • 2 cups lettuce, shredded
  • 1 carrot, shredded
  • 2 ounces queso fresco, crumbled, optional
  • 1 tomato, chopped, optional
  • ¼ cup sour cream, optional

Serving Size: 2 People



 

Preparation Instructions

In a skillet combine the black beans, cumin and a couple spoonfuls of salsa. Stir over medium heat, add a splash of water if they appear to dry out.

Warm the corn tortillas in a skillet over low heat. Once pliable, dollop in the black beans and top with any of the remaining ingredients:
Salsa, Lettuce, Carrots, Queso Fresca, Tomato, and Sour Cream.

Other fun toppings include:
Diced Sweet Onion, Avocado, Guacamole, or Black Olives
