Snap Peas & Mozzarella

A bright dressing with garlic scapes laces through fresh herbs & mozzarella with crispy snap peas.

Ingredients

  • 1 lemon
  • tablespoon extra-virgin olive oil
  • ¼ teaspoon salt
  • 1 pinch black pepper, freshly ground
  • 1 garlic scape, or 1 clove garlic, minced
  • 4 ounces fresh mozzarella
  • ¼ cup fresh basil, or mint
  • 1 cup snap peas, trimmed & halved

Serving Size: 2 People



 

Preparation Instructions

Whisk together the lemon juice, olive oil, salt and fresh black pepper. Mince up the garlic scapes or clove and toss in.

Cut the fresh mozzarella into small bite-sized pieces. Tear the fresh basil or mint into pieces. Toss all of it with the dressing.

Taste. Adjust the flavors as needed.
