Portabello Burgers with Artichoke Kale Slaw & Garlic Scape Tahini

Prepare the Artichoke Slaw first. Take it all a step further by preparing your own Marinated Artichokes from scratch. Marinate the portabellos. Whip up the Garlic Scape Tahini Dressing. Grill the Portabello Burgers next and serve with the dressing on top and the slaw on the side.

Marinated Artichoke Kale Salad

Massaging kale with a vinaigrette, a splash of the marinated artichoke juice and a handful of the hearts makes for a quick, scrumptious slaw. Making your own Marinated Artichokes is taking all of this a step further, but if you have a pile of fresh artichokes I highly recommend this step. Whatever you do try to make the croutons from scratch. Although, you can make this gluten-free by making these Polenta Croutons instead.

Grilled Portobello Burgers

There is something about portobellos that feels as if they were made to be grilled. On a grill pan on your stove or in the fresh air outside the char marks and soft centers are worth it. Top with your favorite burger toppings… mayo, mustard, ketchup, lettuce, avocado, sprouts, etc.

Garlic Scape Tahini Dressing

Garlic scapes or snakes are the curling tops of the garlic that provide a bright green garlic flavor. A blender is ideal for this recipe, however, mincing up garlic scapes and whisking in the remaining liquid ingredients will work, too.
