Week of May 27, 2012

Grilling season has arrived! While many of you may grill throughout the year, I imagine more of you (like ourselves) wait for the start of summer or Memorial Day to really get things rolling in your outdoor kitchen. Spring Burgers with Sweet Potato Fries are certainly welcome but also consider the Portabello Burgers for a meatless celebration with Garlic Scape Tahini Dressing. The big grill day is also perfect for kebabs such as Dijon Chicken Kebabs and Bacon Asparagus Skewers.

Vegetables deserve some serious grill time and if you have yet to try Grilling Artichokes please do not hesitate to char them up a bit and dip them in a Balsamic Vinaigrette. Potato salad gets a makeover this week by grilling the potatoes and then tossing with a generous amount of baby greens and creamy yogurt dressing in the Grilled Potato Salad.

Fish Tacos also appreciate a little grill time or seared stovetop in a skillet. Make the tacos even more exciting with Guacamame Salad, Radish Salsa and a pile of Black Beans.

Of course, this unofficial start of summer vacation is also a great time for potluck salads such as the creamy, yet not too mayonnaise-y, veggie packed Macaroni Salad and the easy to make ahead Marinated Artichoke Kale Salad or the even simpler Massaged Kale Salad.

As herbs slowly come into season whip up a pesto to go with the spring comfort dish Creamy Pea Cannelloni with Carrot Dressed Arugula.

Make the Herb & Goat Cheese Stuffed Snap Peas for a quick party appetizer or fancy schmancy lunch on the go. Another simple lunch uses leftover pesto Sun-Dried Tomato & Arugula Grilled Cheese

This week use the leftover Guacamame Salad to make breakfast Tostadas topped with a Runny Egg on top. Also, a red, white & blue seasonal breakfast of French Toast with Maple Blueberries, Strawberries & Lavender Yogurt will start your Memorial Day week right.

Happy Memorial Day! May this day be a day to celebrate those who served our country but the glorious food we are blessed to receive and share.
