French Toast

French toast can come together very quickly, even on a fast weekday morning for just a couple people. But, if you do not have 15 minutes to spare make a big batch on the weekend. Freeze individually and heat in a toaster or oven until heated through. Serve with fresh fruit and a dollop of yogurt.

Make this gluten-free with your favorite GF bread or dairy-free by using orange juice instead of milk.

Ingredients

  • 4 slices whole wheat bread
  • 3 eggs, beaten slightly
  • 3 tablespoons milk, or orange juice, or your favorite milk substitute
  • 2 tablespoons butter, unsalted, more or less as needed or coconut oil for dairy-free

Serving Size: 2 People



 

Preparation Instructions

Whisk together the eggs & milk. Dip each slice of bread into the eggs, coating on each side until thoroughly soaked.

Warm the butter in a skillet or cast-iron pan over medium heat. As soon as the butter melts add the soaked bread. Sear on one side for 3-6 minutes. Flip over and sear on the other side until golden and cooked through.
