Spring Burgers

Taylor your hamburger toppings to spring with shredded carrots, radishes, sprouts, pea shoots, and top with a creamy herb sauce. Fold up in lettuce as we prefer or add a whole-grain bun.

Ingredients

  • 1 tablespoon whole-grain mustard, or dijon
  • 1 teaspoon worcestershire sauce
  • ½ teaspoon salt
  • ½ lb ground beef
  • 1 carrot
  • 2 radishes
  • 4 leaves lettuce
  • ¼ cup fresh herbs, such as basil, mint, parsley or arugula
  • 2 tablespoons mayonnaise
  • 2 tablespoons greek yogurt, or more mayo to make it dairy-free
  • 2 hamburger buns, whole-grain, optional

Serving Size: 2 People



 

Preparation Instructions

Heat an outdoor grill over medium-high heat.

Whisk together the mustard, Worcestershire sauce and most of the salt. Gently fold the ground meat into the mustard and then into 4-ounce patties. Take care not to mash the meat too hard and plan to see clumps of the mustard throughout.

Place the patties on the grill and prepare the remaining ingredients. Wash & dry the lettuce and sprouts. Shred the carrots and radishes. Mince the fresh herbs and whisk into the mayonnaise & Greek yogurt. Season with salt & pepper to taste.

Pile the veggies into the lettuce leaves. Top with the grilled burgers and a dollop of the herb sauce. Wrap up.
