Bacon Asparagus Skewers

from Grilled Artichokes with Kebabs: Dijon Chicken & Bacon Asparagus, the Week of May 27, 2012.
View the next recipe for this meal.

Asparagus is woven with strips of bacon to create a not only delicious, but attractive side dish perfect for your next barbeque.

Ingredients

  • 12 stalks asparagus
  • 4 slices bacon

Serving Size: 2 People

Preparation Instructions

If using wooden skewers, soak these for at least 10 minutes prior. Otherwise, use metal skewers.

Rinse the asparagus and cut into 2-3 inch pieces. Start with a piece of asparagus placed about 2 inches down. Skewer the strip of bacon about an inch from its end. Add another piece of asparagus perpendicular and against the bacon. Fold the bacon over the asparagus and then add another piece. Repeat, pushing the asparagus wrapped bacon down gently as necessary until the bacon strip has been folded back and forth against the asparagus pieces.

Repeat with the remaining bacon and asparagus until one of them has been used up.

Heat a grill to medium-high. Place on the grill for about 6-10 minutes. Flip over and continue to sear for another 6-10 minutes on the other side.

Watch for flare ups, especially if your bacon is especially fatty. Pull any skewers that are flaring up and move to another location on the grill.
