Massaged Kale Slaw

A simple marinade is massaged into the kale until it softens slightly and absorbs the dressing’s flavors. Add more veggies, dried fruit, nuts or cheeses to this salad as desired. It also softens in the fridge, so you can enjoy leftovers for a couple days or make it ahead.

Ingredients

  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice, or white wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 bunch kale

Serving Size: 2 People



 

Preparation Instructions

Whisk the dijon and lemon juice or vinegar. Slowly drizzle in the olive oil while whisking as the dressing thickens. Season lightly with salt and pepper.

Wash and dry the kale. Remove any tough stems by slicing into the leaf just along the stalk. Stack up the leaves and thinly slice, paper thin.

Toss the kale with the dressing. Using your clean hands, gently fold and press the kale. Give it a nice massage. You can serve it immediately or allow it to rest and marinate. The flavors will develop with time while the kale’s tough texture softens.
