Grilled Chicken Caesar Salad

While the grill heats up prepare all of your ingredients. Trim the chicken and place it on the grill. Next, slice the bread/polenta and romaine and prepare to grill. When the chicken is flipped to the other side, add the bread to sear. Remove the croutons when charred to your desires. Remove the chicken, cover and allow to rest for a few minutes. Sear the lettuce quickly on each side and serve while still hot with the chicken, croutons and dressing.

I will admit, when this grilling the salad craze started I was very hesitant to get on board. But, then I grilled endive and suddenly a heart of romaine was no longer safe. Plan to sear quickly at the last minute and serve while still hot with slightly charred edges.
