Cherry Wild Rice with Caramelized Lemons & Pistachios over Grilled Cauliflower

Simmer the rice and prepare the vegetables. Start with a large cauliflower or two smaller ones. Slice up the cauliflower and mince up any small pieces for the rice dish until you have about 2 cups minced. Heat up a grill outside or a grill pan. Saute the onions, cauliflower and more for the rice. Mince up the lemon and nuts. When the veggies are done cooking remove to another pan, wipe it out, and add the lemon & nuts. Saute those until caramelized. Grill the cauliflower until tender. Finish up the Cherry Wild Rice. Serve the cauliflower and rice with a generous sprinkle of the nuts on top of each.

Cherry Wild Rice

Caramelized cauliflower & onions with a wild rice blend are drizzled with a tangy red wine vinaigrette, a generous handful of cherries, herbs and walnut bits. Make this a main dish salad, by adding extra walnuts, shredded chicken or chunks of your favorite cheese, such as feta, sharp white cheddar or even blue.

Grilled Cauliflower

Chunks or thick slices of cauliflower are fun grilled, although relatively plain. Be sure to generously season with salt & pepper and drizzle on your favorite sauce to serve. It is the perfect base for stronger flavors such as blue cheese or pesto.
