Spicy Coffee Grilled Chicken

from Spicy Coffee Chicken, Grilled Kale Chips and Fire & Ice Tomatoes, the Week of July 8, 2012.
View the previous or next recipe for this meal.

Grounds from your favorite morning beverage are spiced up, coated on to chicken and then grilled. Taste the seasonings before you shake them on the chicken. Adjust as needed. We like bone-in chicken, but if you prefer boneless, skinless that works too. The sugar gives it a slight caramelized crust, but can be omitted if you prefer.

Ingredients

  • ¼ cup ground coffee
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin, ground
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 lb chicken, your favorite pieces to grill

Serving Size: 2 People

Preparation Instructions

Combine the seasonings in a large ziploc or bowl.

Heat the grill to medium-high heat.

Trim the chicken to the appropriate grilling serving sizes. Place in the bag or bowl and toss or shake to coat the chicken evenly.

Place the coated chicken pieces on the grill. Plan on about 6-12 minutes on each side, depending on the thickness and size of the pieces. The internal temperature will be about 165-170.

Remove the meat and allow to rest for at least 5 minutes before slicing.
