Eggplant Parmesan with Fresh Tomato Pasta

Prepare the Eggplant Parmesan. Once it is baking, bring a large pot of water up to a boil. Chop up all of the ingredients for the Fresh Tomato Sauce. When the water is boiling, toss in the pasta to cook. Serve the hot eggplant with the hot pasta tossed with the fresh sauce. Sprinkle with a bit extra Parmesan if desired.
