Thai Melon & Broccoli Salads with Shiso Noodles

Start boiling the water. Prepare the vegetables. Whisk up each dressing. Blanch the broccoli. Reserve the liquid and cook the noodles next. Fold each veggie dish separately. Toss the pasta with the herbs and serve hot or room temperature with the veggies alongside.

Thai Almond Broccoli

This is more or less a salad with a nutty-thai sauce. Use peanut butter or even sunflower butter instead of the almond butter. It is tasty chilled as a main dish salad with a few extra veggies or serve it hot over rice.

Shiso Noodles

Shiso is an herb from Japan that is becoming just a bit more popular at Farmers Markets or Asian Markets. If you cannot find it, Thai or regular basil are scrumptious substitutes. Soba or rice noodles work well, but if you cannot find those try a whole grain spaghetti, broken in half.

Thai Melon Salad

Spicy, salty and a touch sweet, this Thai-inspired melon & cucumber salad is cool, refreshing and on fire at the same time. You could potentially add more veggies such as bell peppers or bean sprouts if desired.
