Spicy Almond Eggplant over Shiso Noodles

Salt the eggplant and rest for a few minutes. Bring the water to a boil for the noodles. Whip up the almond sauce. Slice the onions, tomatoes and remaining ingredients. Saute the ingredients for the saute. Finish with the spicy almond sauce. Toss the noodles with the rinsed shiso or basil. Serve the eggplant saute across the noodles.

An almost Thai Peanut Sauce, but with almonds instead becomes the saucy goodness that brings this eggplant saute together.

Shiso Noodles

Shiso is an herb from Japan that is becoming just a bit more popular at Farmers Markets or Asian Markets. If you cannot find it, Thai or regular basil are scrumptious substitutes. Soba or rice noodles work well, but if you cannot find those try a whole grain spaghetti, broken in half.
