If you haven’t wrapped your hands around a large bunch of basil yet this summer, find one as soon as possible for a batch of beautiful pesto. Spread it across Pesto Salmon or toss into a Pesto Pasta Salad. Both of these pesto dishes would be balanced nicely with a Zucchini Marinated Salad and Parmesan Grilled Eggplant.
The Watermelon Stack is a juicy dish that is neither a lasagna (too fresh, cold & missing pasta) nor a salad (as it is sliced into portions) but you may be tempted by those names. With the refreshing layers & stacked melon as the main dish Grilled Potato & Greens Salad with saucey-cheesy smeared Elote Corn will complete the deal.
One of the easiest pantry pasta dishes to create is the Spaghetti Carbonara. I suppose most of us don’t have bacon in our fridge regularly, but it doesn’t take much of it to flavor the egg coated strands in this simple dish. Honey dew replaces tomatoes in an unusual Melon Caprese that goes alongside nicely with the pasta and a Lemon Dressed Spinach Salad.
Eggplant & tomatoes are tossed into a Spicy Almond Eggplant saute to top a bowl of Shiso Soba Noodles for a hearty vegan dinner.
Kohlrabi is starting to make more appearances from farm to kitchen and it is always a wonder what to do with the landed from space root vegetable. Blended into a creamy filling, they pack nicely into spicy peppers for the Kohlrabi Stuffed Poblanos. Match them up with a Curdito cabbage slaw and Cantaloupe Salsa. The Fiesta Cobb Salad is another Mexican inspired dish perfect for using up leftover kernals from the Elote Corn & the bacon or prosciutto from the Carbonara.
